Ice Cream
I bought a ice cream maker last year, it has turned out to be a great investment. It is a cuisineart ICE-21 - It makes around 1.5 quarts of ice cream per batch, very much worth the effort and price. I use a variation of the salt and straw ice cream base:
2 Cups milk, 1 Cup heavy cream, 30 grams sugar, 50 grams allulose (an artificial sweetener for health and taste reasons, but can be replaced with sugar), pinch of salt, 1 tablespoon light corn syrup, A dab of vanilla extract, many tablespoons of skim milk powder, very little xantham gum (1/3 of a teaspoon)
Here are some of my favorite flavors:
- Hojicha: Very simple, just add hojicha powder
- Black Sesame: Use black sesame powder and an immersion blender
- Hazelnut: Steep chopped hazelnuts in milk, then strain out. Pairs well with vanilla
- Horchata: Steep cinnamon sticks and rice in milk
- Rice: Half and half arborio rice/sticky rice, cooked in milk and blended until only a few chunks remain
- Matcha: Same as hojicha
Unfortunately I don't have any pictures of my ice cream (as of now), I always forget.
